Tasting notes

This wine speaks to this place.  One of the first vineyard planted on our Elm Valley Estate.  Many of the vines are own rooted, planted in the ealy 1980's.  Vignoles and subtle oak are supported by crisp acidity and carefully aged fruit.

Production notes

Grapes are hand picked and whole cluster pressed in the fall.  Only cuveé fractions are used for this product.  The juice is fermented in stainless steel after settling.  33% Solera reserve wines are added during fermentation.  These reserve wines consist of wines made from grapes harvested from this vineyard every year since 1993.  Reserve wines are drawn off for blending the next year.  The wine is filtered and then tirage bottled during the winter/spring the following year.  The wine is aged for approximately 4 years en tirage until it is riddled, and disgorged.
